Thanksgiving holiday closures by Class II cream processors are likely to help surplus cream
find its way into Northeast butter production. As of now, churning is fairly steady, but
predicted to grow by week�s end. Sources in the butter market expect the scheduling of 80
percent butter runs to meet good export interest. Inventories are adequate, as most
manufacturers look to avoid exceeding production limitations. Domestic retail butter sales
remain good into the Thanksgiving holiday week. Bulk butter prices range from 2 cents over
to 7 cents over the CME average. The butter market tone is holding fairly steady.
